Well, Cupid sure came to my house. Roses during dinner on Thursday, and these aren't just any old roses. Not from this guy. This guy, he arranges his own bouquet with fillers & greenery, and he even trims the ends. It has been a reoccurring thing ever since we met. What a keeper! Saturday he surprised me, and we went snowshoeing. It was our first time, but not our last!!! Our destination? Lost Lake, which is past the Nederlands and right outside Eldora.
We made it over 6 miles round trip, and we got to pave the trail part of the way. We felt the burn! And boy, was it ever a gorgeous day. We had to share the trail with some cross country skiers, and Frankie greeted all the dogs we met along the way. He probably did the trail twice, with as much running back and forth that he did. We couldn't believe how much energy he had!! After our hike, we hit up Wild Mountain Smokehouse in Nederland for a couple beers and some nachos (actually, I only needed one beer - they were 8 point home brews, and mighty delicious). Here is our little cheers to Valentine's Day! I am so thankful to have Brian as my Valentine :)
We got home and had ourselves a dead doggie. It worked out perfectly, cuz we had a date to Colt and Gray's. It is a wonderful restaurant right off of 15th and Platte. We both got some delicious beer, and they came in wine glasses! Now that will throw your taste-buds for a whirl. We had an appetizer of Gold Potato Gnocchi, Butternut Squash, Shallots, Sage, Brown Butter & Parmesan. If you ever stop in, they just melt in your mouth! Brian got the Grilled Long Farm Pork Chop that was served with a warm salad of Bacon, Spaetzle, Arugula and Apple (delish!), and I got the Braised Colorado Lamb Shank that was accompanied by Seared Broccoli Rabe, Mascarpone Polenta & Gremolata - it was fall off the bone good! And by that time we were way to stuffed for dessert, ... maybe next time! Here are a few pics of our super fun filled day:
